รสชาติอะไรกัน....ผลไม้แสนน่าทึ่ง

สำหรับผม มะพร้าวอ่อนคือหนึ่งความภาคภูมิใจของไทย รูปร่างก็แสนคลาสสิค กลิ่นหอมดุจเครื่องประทินผิว รสชาติหรือก็อร่อยเหาะ hi-class super

ทำเค้กยังไงก็อร่อย ไม่งั้นต้องโทษคนทำ 55

อย่างไรก็ดี ในวงการเชฟ พวกเรารู้กันดีว่า "ขนมง่ายๆมักยากเสมอ" และมันคือความจริง ยิ่งตั้งความหวังไว้สูงลิ่ว หล่นลงมากระแทกพื้นทีคงเจ็บน่าดู

หวังว่ามันจะไม่เป็นแบบนั้น โดยเฉพาะเมื่อมีช้อนส้อมจานชามและคนชิมรออยู่เป็นตับแบบนี้

การทำเค้กมะพร้าวก็ไม่ยากหรอกครับ ผมมักนึกถึงเจนัวส์และครีมสดเสมอ

ดูวิธีทำเจนัวส์ได้ที่นี่คับบ how to make genoise here, เปลี่ยนจากใส่ผงกาแฟเป็นกะทิ 2 TBSPและน้ำมะพร้าว 2 TBSP นะคับ....

แค่นี้ก็รอกินได้แล้ว !!!!


พอเค้กเย็นก็ตีวิปครีม 2 cup กับน้ำตาล 4 TBSP ให้ตั้งยอดแข็งแล้วก็ปาดเค้กซ้าา

สูตรฟัดจ์มะพร้าว

1cup       coconut milk
4  TBSP   sugar
2 and a half TBSP     cornstarch
half cup of               coconut juice
little salt

วิธีทำก็ไม่มีอะไร ต้มทุกอย่างพอเดือด รอให้เย็นลง ราดหน้าด้านบนเค้ก


เกิดอยากให้สวยหน่อยก็ทำแผ่นช็อกโกแล็ตแปะขอบหน่อยคับบ you can see how to do it here, แช่เค้กในตู้เย็น 4 ชั่วโมงก็กินได้แล้ว


ดูเหมือนหงษ์ขาว และโชคดีที่มันอร่อยไว้อย่างที่คิด

อ้อ เกือบลืม เลือกมะพร้าวให้ดี 

เสียเวลาเลือกซักนิด

ดีกว่าเสียเวลาทำทั้งวันแล้วได้เค้กรสชาติจืดชืดนะคับ

ถ้าเนื้อมะพร้าวไม่หวานมัน เนื้อเค้กและครีมสดช่วยอะไรคุณไม่ได้หรอกครับ

.....เวลาหั่นปลามีดต้องคม อย่าเอามะพร้าวไม่อร่อยมาทำเค้ก

ไม่งั้นจะมาโทษสูตรและวิธีทำที่ง่ายเกินไปแบบนี้ไม่ได้นะค้าบบ

เค้กส้มแบบชาวบ้าน สานตำนานความสดชื่นจากผลสู่ปากแล้ววันนี้


Orange cake legend ฟังดูยิ่งใหญ่อลังการดี เค้กส้มในตำนาน

If this is too simple, I will not describe much about how to do it, but just want to recommend to put 2 TBSP of yoghurt in sponge batter, it improves the taste of this orange sponge cake to be more gentle, and more delicious !!!!


Anyway, I will give the orange fudge for the cake cover as this;

=============================
Sunquick 4 TBSP
sugar 55 g.
cornstarch  2 TBSP
orange juice 1 cup and water 4 TBSP
butter 45 g.
and orange extract 1 TSP

put everything together, set to boil, chill, and use for the cake !!!!!!!!!!!


SUPERB !!!!!!! chill in the fridge ast least 2 hours, then....do I have to tell what to do....

EAT IT !!!!!!!!!!!!!!! 

Ahh....ha for the chocolate piece decoration, I didn' t take the photo 5555


Well, but I have the chocolate piece picture fro another colour....It has the same process, so I will put it here.....

When you do it, first you melt 2 different colour chocolate


then, put one colour on the acetate, paint it as you want,


Then, wait for it to set, or quickly put it in the fridge, count 1, 2, 3, and 4....that' s enough !!


put another colour chocolate above it, be aware not to put in too-hot chocolate !!!!


smooth the surface, and put in the fridge, let it set.....


when the chocolate starts to cool, bring it to cut in the shape you want, do not wait until the chocolate completely cools, otherwise it will be too strong to create shape.


Here we go, the chocolate piece for decoration......

I think this orange cake, whether well be decorated or not, simply generates power,

That' s the most important thing to have !!!!!!!!!!

Brownie Cheesecake the beautiful combination


Oh!! dear....
what ever it is....this is gonna make my day even more beautiful. It' s obviously a vey simple and ah....ha basic receipe....

think about when your mom make any dessert for you when you are just a child, it has never been a complicated dessert.

But that describe everything....without having to say anything....

that simple is the best......especially when you want "taste" rather than "look"

I make this simple recipe like "Brownie cheesecake" as when I' m in a mood to do something for everyone at home to eat, 

and you know what !!!!!!!!!!!!!!  

the more simple the dessert, the quicker they eat it...............funny huh ????

You may have brownie recipe of your own, use it !!!!!

about the cheesecake part, for this recipe, I recommend you just use 250 g cream cheese whisk with 2 eggs and 75 g sugar....for 5 inch pan....and that' s it !!!!!


I add strawberry filling a little to create sweetness floavour inside the mud-taste of this recipe, that works really well !!!!!


bake, and brush with apricot glaze, and then SERVE !!!!!!!



I love it !!!!!!!!!!!!!

The checkerboard layer cake

Ahh....when I' m freshy in cake baking, I always wonder about how to make this "checkerboard cake" and I think it's cool to try making it.

Everything has a secret, not except this cake.......but you can do this in many different ways, 
such as using the many sizes circle plate to cut the cake (2 coloured) in different size and assembly it again with buttercream or whip cream (with the one colour-and the other coloured arrangement)

Now I can make it !!!!

This cake I use coffee and chocolate sponge cake to create mocha taste, It's delicious !!!!


Select your favorite cake,and try making this checkerboard-looked cake, bcoz it's funny, and cool. eating it is good but making it is great !!!!!

What makes me win the contest.... "Strawberlate"


When something looks simple....it scares me always....


Considering I' m gonna participate in cake making contest , what I will do should look ahh....ha...... a little (if not much) beautiful and complicated.

I made this the night before I attend the contest at the five-star hotel, calling for the winner, and the prize is the "chance" to work with prefessional pastry chef in the hotel.

Woossss!!!!!!! what a chance.............
But....rather than anything, I want some "creative and good looking cake" to win

I' m sure the theme is "make the new, initiative cake"

Likes I won the lottery, yes it is, so I know what I' m going to do !!!!


but finally I decide to do the simple chocolate mousse with strawberry, sounds simple?????


Yes, very simple, but I' m sure there's  no one in the room ever test it.




I use chocolate, coffee, eggs for the mousse, you can see how to make my best mousse here, then I use strawberry and cream cheese for the filling. 

Everything put on top of brownie-liked cake base !!


And finish with the dusting cocoa to the surface.
 
In the competition day, I decorate more than this, but I didn't take any photos (bcoz it' s very busy and mess up with everything in the room)
So, I don't  have photo of it when finish, and the photo of its layer when cut in half (that I really want to show you, damn it !!!!!)

actually this alone cannot win me the prize, so why I can win it????
 
this cake may be simple except one secret............that
 
 
I didn't use any SUGAR in this recipe..........
 
what I use for the "sweetness" that change the taste of basic chocolate mousse and brownie cake base is................

The best chocolate mousse in 5 minutes


Yeh....., I didn't lie.....you can do the best chocolate mousse as fast and furious as you can ever imagine. 

What you need is just the Chocolate, sugar, and eggs.........that' s it !!!!!!!!!

Whhhhhatttt ???????? only 3 things ??????

why more? if these are too simple, thinking about making fried eggs....less ingredient create better taste. you don't even want a lot of ingredients to generate "taste"

but in this case, you need to have the good (if not great) quality chocolate (I use more than 70% cocoa butter chocolate)

and the good eggs....

What is good egg???????????? use your brain, judge by yourself , practicing how to choose the good quality egg since it is the major part of any kind of cake.

So, come to how to make it.....

melt chocolate (even in microwave or bain marie), set aside to cool down.

separate the egg into yolks and egg white........put yolks in melted chocolate and whisk gently.

Then,beat egg white with sugar (granulated) until stiff peak...., fold in chocolate mixture and put in the mold at least 6 hours.

Done !!!!!!!!!!!!!!!! 


I decorate it with cut and diced brownie, which make it even better!!!!!!!!!!!



That' s it !!!!!!!!!!!!!!

why make it so complicate.......if something simple is better.....

Oh!!!!!! sorry.......not just better.....

It' s the best....

Chocolate Basic....why put something else


The most often question customers, or even students ask me is....

what is the best chocolate cake you recommend???? what is the most delicious????

I stand for one thing, one answer, always.........

It is "Chocolate cake" ..............basic but classic

why put a lot of other things in chocolate cake if you are chocolate lover.....

why?????? put in banana, strawberry, almond, peanut butter, orange, even a lot of whipped cream, blah.........blah..........

If what you want is "Chocolate" just stick to it.


I prefer doing chocolate cake with brownie-liked taste, by using any brownie recipe you like, increase the egg by 1 or 2 to make it cake-liked figure

For the frosting, I love fudge, but you can use ganache, depending on what you like.......

soft..........or...............chocoholic taste


But rather than believing what I said, most of customer prefers to add something in chocolate cake, and what they always say that just basic chocolate cake is boring.....and.....ah.....ah......too simple......

I can't believe they said that..............

After that banana chocolate, chocolate peanut butter and so on they ordered....., they always come to ask for just chocolate fudge cake later on........

What?????????????

Why just chocolate cake is too basic, and what if it taste great, and the best, the prince of all kinds of chocolate cake on earth.


I have been thinking about this like nuts......and I know it!!!!!!!!!!!!!!!!!!

It's not the basic chocolate cake that is boring

not because its name or its simple-looked...............

the point is the customer....who realized they need something better than the normal chocolate fudge cake

........it' s because they just never eat the real...........best chocolate ones

otherwise they will not need something more in chocolate cake........

like I do.....................


Sriracha Pineapple with meringue


Thailand's  two famous Pineapple are Sriracha and Phuket......

The boring day is the perfect day creating some brand new "dessert" ....Hey hey., I'm not going to create some "breakthrough" or "OMG what is it!!!!!!!!!!!!!!!" kind of dessert anyway55.


Come on., at least this is new to me. I haven't seen anyone do a meringue and pineapple together because umh....I guess both of them are so sweet......so what?? umh..thinking about something so sweet are living together........


Yeh..that's right!!!! it's too sweet.


Oh..dear.......but I'll do it now because fortunately the taste of my Sriracha pineapple is not so sweet (actually it's sour more than sweet) so it's gonna be perfect match 5555)


I start with preparing boiled caramel, then adding butter....then put in pineapple  to caramelised.


Then, I prepare meringue...., my favorite is simple French meringue., the naked....simple, and just perfect way of doing is to make the meringue by whisking egg white with granulated sugar.


That' s it...... simple as that !!!! 

Then, I pipe the merinque around the caramelised pineapple, and put it in the oven, baked at 175 C until well cream-coloured look., or you can smell sugar aroma like the perfume thing!!!!

that' s it "The Sriracha Pineapple with meringue" , you cut it in half, and have a look inside.

 This is what I called "Perfect match" as if they are a couple waiting for each other to be together.

Doesn' t make any sense?? sound crazy??

Recipe


Caramelised pineapple:

1   Sriracha (or any kind you want) pineapple

1/2 cup sugar

2 TBSP butter

French meringue

2   egg white

1/2 cup granulated sugar

Strawberry Yogurt again and again


Why strawberry is the most recognized fruit when talking about fresh fruits with yogurt cake??

Asking me?? ah..ha I guess girl likes it....oh yeh..women likes it too....

Why not?? strawberry, its color, flavour, why try something else 

especially when it comes to "Birthday cake" it should be "strawberry"

please be quiet...........

Strawberry is not the question...., now which strawberry?? fresh or canned
lets say like "I prefer fresh but I use canned"

and I recommend using canned strawberry with yogurt cake because it's a little sweeter than the raw one and the taste goes well, but this is my opinion.....

yes, this is my cake, so I use my opinion, but if you do some, use yours !!!!

Do I have to say this??????

Again, as always, I use simple genoise for the cake, frosting with fresh heavy cream with yogurt strawberry, and yeh, canned strawberry


put it in the yogurt, just as much as you want  use your brain, judge by yourself, it will be too sweet if you put a lot since you have cream, yogurt, and canned strawberry together now....

you may not want to eat a sugar-liked yogurt cake....

what you need is the sweet and sour........is better


then, I do the white chocolate strip for decoration, but I tell you what !!

doing this in my country (hotter than normal) is the beyond master-skilled chocolate work needed......

because it 's so difficult to set !!!!!!!!!!! hope you have fridge, it helps !!!!!!

I hate decorating yogurt cake because it's dirty, yogurt will need the fridge all the time, you need to work very fast, and I hate decorating cake with so many things on top, it's artless for me....

BUT....I did it already, I hope it looks sweet enough for being the "Birthday cake"


Again..............thinking about it. Next time customer wants some yogurt cake, I will recommend something else. I would say it's boring na using strawberry, strawberry is expensive, blah....blah.......


But how much I say, how much I want them to order something else for change, not boring things like strawberry.......

They wants strawberry.............

Ahh ha..just like they have to believe what I say.....

They paid....

Tropical fruits meet and greet !!!!


Baking.....in a hot hot day...., is like working in sauna., except there is no room for resting....and when you are too hot, you still have to stay in the room, either

But....today I am feeling better than a normal day, with the freshy things like many kinds of fruits in the ordered cake.

I can reserve some for myself to eat during the making, that' s the best thing today......

You can eat whatever fruits you want, but never tried eating with fresh whipped cream...is the shameful things I bet you never know it is....and how it taste....

Genoise, cream, fruits are the three basic elements that create therapy wihtout any therapist.

I can gaurantee that !!!!


I use simple genoise for the cake, I use heavy cream to whip,and select the fruits I love such as mango, grape, orange, kiwi, but not strawberry because it dilute other fruits' flavour (at least in my thought)

But you can select any fruits you want, and how much you want too !!!!! there 's no rules


put together in a bowl, pour in some lemon juice, mix well, and yahoo!!!!!!

frost the cream all around the cake, and start inserting fruits in any elements you want.

Just put it in !!!!!!!!!!!!!!!!!!!!



Hey..hey..I can say this is the drug to heel your heat....on any hottest day
